Eryngium is a natural thistle, also known as Sea Holly, air dried for flower arranging and flower crowns. Each bunch consists of 5 or more branched stems, just under 60cm long. Each small natural thistle flower is approximately 1 to 3 cm long. Natural variability means that the dried flower heads and stems can vary from a rich metallic blue through paler shades to silver, green and brown. Eryngium is popular in floristry for weddings or to add an architectural element to a bouquet or home decor. Being part of the thistle family, eryngiums are popular for Scottish themed events. Not for food use.
